I used Chivas Regal 12 year but any low peaty scotch will work great. Originally crafted by Eric Castro from Polite Provisions in San Diego, California, this drink was meant to be a take on the Vieux Carré. The scotch is very prominent at first. But after a few sips it balances out and becomes just slightly smokey and slightly rich; a subtle reminder of why we should include more scotch in cocktails.
