    Fresh Green Beans (snapped and cleaned)

    Bacon

    Large Yellow or White Onion, diced

    Large potatoes, chopped

    Cloves garlic, minced

    Red Pepper Flake

    Smoked Ham Hock

Instructions

  • 1 - Cook the Bacon in a dutch oven or heavy bottomed pot, remove and set to drain on paper towel
  • 2 - Saute the onion and garlic till translucent
  • 3 - Add ham hock, bacon and green beans, along with pepper flake and cayenne
  • 4 - Add chicken broth till beans are just covered. After a couple hours you should be able to test the broth to see if you want more spice.
  • 5 - Simmer on Low for approximately 1.5 hours
  • 6 - Add your potatoes and cook for another 30 minutes or so, until potatoes are cooked through.
